EXPERIENCE- THE BEDOUIN AND MODERN WADI RUM



The bedouin have inhabited the Wadi Rum region for thousands of years,their lifestyle perfectly adapted the the semi-arid enviroment. In the past, they bred camels,goat and sheep on the sand floor and the mountain slopes and lived in tents or in caves. They would move their livestock seasonally in search of grazing areas, management and of the use of wild plnts and animals as food and medicine. The tents woven by the bedouin women from goat,sheep or camel wool are called : housee if hair" in Arabic. They are the most appropriate solution to the environmen and the needs of thosen living in it: the tents can be dismanted to allow free movement in pursuit of grazing locations, have flexible opening to adapt to the changes in wind direction and are naturally biodegradable. When first visit them, there are very frendly and serve welcome coffee with cardamon is good for the body to release my stress. Resipe as below:



Recipe: White Coffee with Cardamon crusted
Yield: 4 person
Ingredients
2 tbsp White coffee bean - Roasted on the fire
8 pcs Whole cardamon - crust
2 pcs Clove
6 cup Water
8 cube Sugar to taste
Method:
1. Boil the coffee bean with water for 4 minutes, then add other ingredients.
2. serve hot.

TRAVEL TO COLOMBO,SRI LANKA

2 week in Zanzibar, I continue my journey to Sri Lanka and arrived Colombo International Airport on 11th May at 8.00am. one night stay in Trans Asia Hotel then travel by bus to Goa, Galle,Hambantota,Ratnapura. Has a Tv3 Host for spoice route season 2, In Sri Lanka to observe the larget producer of Cinnamon. 90% of the world Cinnmon comes from the region of Ratnapura. People are very friendly and most of the cuisine hire is very spicy. The best cinnamon and tea came from this country. The best recipe from Cinnamon tree.
RECIPE: CHICKEN IN SPICEY TOMATO SAUCE
YIELD : 8 PERSON
TIME: 30 MINUTE
INGREDIENTS:
1.5 kg Chicken wing
6 tbsp Cooking Oil
80g Onion - chopped
20g Garlic - chopped
30g Sliced Ginger
3 tbsp Chili Flake
3 in Cinnamon stick
4 pcs Cardamon
4 cps Clove
1 tbsp Blackpeper powder
3 tbsp Tomato Paste
4 pcs Green chili - cut inti to
3 cup Coconut Milk
1 cup Water
2 tbsp Salt
4 tbsp Sugar

Method:
1. Heat the cooking oil, then add garlic, ginger, onion,green chili, spices and sauteed for 1 minute.
2. Add tomato paste, chicken wing and stir well, then add cocunt milk, water and let it boil.
3. slow the fire then let it simmer until the sauce become thick.
4. Lastly add salt and sugar to taste.
5. Remove from the stove, ready to serve garnish with Chooped coriender leaf.

THE SIMPLE RECIPE FROM ZANZIBAR

Last month travel to Zanzibar, Tazania to complete my Tv cooking program Spice Route Season 2 with crew Tv3 Malaysia. Zanzibar is very nice country and people are very friendly. The simple recipe that we can share is Braised Banana in Coconut Milk.

Recipe: Banana stewed in Coconut Milk
Yield : 8 person
Time: 30 minutes
Ingredients:
1 kg Banana- Skinless and sliced into 2 pcs
2 cup Light Coconut milk
2 cup Thick Coconut milk
1 cup Sugar
4 pc Clove
8 pcs Cardamon
2 in Cinnamon stick
1 tsp Nutmeg powder
Salt to taste
Method:
1. Arrange the slice Banana in meduim size cooking pot.
2. Sprinkle with sugar and add clove,cinnamon stick,nutmeg powder,salt and cardamon.
3. Then pour light coconut milk and put the pot on the stove and let it boil.
4. Keep simmering then pour thick coconut milk and continue simmer until coconut milk become thick.
5. Remove the pot from the stove,ready to serve garnish with nutmeg powder.

SPICE ROUTE 2 - ZANZIBAR

Dalam program pengembaraan saya di Zanzibar Tazania, Saya rasa gembira kerana masyarakat disini sangat peramah dan menghormati tetamu. Disini juga ada pokok durian, rambutan sama seperti suasana kampong di Malaysia. Tugas saya di sini untuk mencari poko buah pala, pokok buah Pelaga. Saya rasa amt gembira apabila mendapat tahu pokok buah pala adalah berasal dari ke Pulau Melayu. Insyallah apabila saya sampai di Malaysia nanti akan saya lampirkan kepada anda semua gambar-gambar terbaru tentang pengembaraan saya dengan spice route selama 3 bulan. Selepas ini saya akan terus pengembaraan saya ke Sri Lanka dan negera yang terakhir yang saya lawati India....kisah sejarah rempah ratus yang terkenal di Asia tenggara.

SPICE ROUTE SEASON 2

Salam untuk semua...semoga anda setiasa mendapat berkat dari allah. Chef masih lagi mengembara dengan shooting program Spice Routes Season Tv3. Negara pertama yang saya lawati adalah Oman. Saya disambuat baik dan layan mesra oleh masyarakat oman disini saya buah kajian asal unsul pokok kemian dan masakan tradisional Oman. Tahukah anda asal HALWA MUSCAT manisan yang kita makan di Malaysia sebenarnya berasal daripada Bandar Muscat iaitu ibu negara Oman. Saya bangga menjadi rakyat Malaysia kerana kemana saya pergi saya di hormati dan mendapat layanan yang baik. Negara Oman bersih dan kaya dengan budi bahasa. Tunggu resipi yang akan datang.

Negara kedua yang saya singgah adalah ALBANIA... Saya bersyukor kerana kami di sambut baik. 80% penduduk disini berugama Islam, Disini saya mencari asal sebenar Pokok Herbal Sage dan menlihat sendiri tempat bersejarah pemerintahan Islam. Tak lupa berbagai resipi istemewa masyarakat disini. Insyallah saya akan cerita pengalaman saya dalam buku masakan saya nanti.

Selama 2 minggu saya di Albania sempat juga bermain di pergunungan Salji , selepas itu saya mengembara ke Jordan. Itulah istemewa Islam kita telah dilatih untuk menlayan dan menghormati tetamu ikut cara rasullulah...saya menerima layan mesra dari penduduk disini. Sememang Malaysia telah dikenali dengan kemajuan,,,,mereka sering bertanya tentanh KLCC. semasa saya di Jordan untuk mencari rempah ratus sempat saya singga di Wadi Rum, Aqaba dan Petra. Disini saya menlihat keagungan Allah mencipta manusia yang beraka mulia..cuba anda bayang bagai manusia boleh membuat ukiran Istana di kawasan Gunung berbatu.

Selepas ke Jordan saya sambung perjalanan ke Zanzibar , Tazania tempat orang kulit hitam, walaupun negera ini baru nak membangun tapi mereka kaya dengan budibahasa saya disambut baik. Kebanyakan penduduk disini berugama islam rata-rata setiap penjuru terdapat masjid. Semasa di kawasan kampung saya teruja apabila menlihat pokok durian, rambutan,nangka seperti macam berada di kampong. Tujuan saya datang kesini untuk mencari pokok buah pala,pokok bunga cengkih dan buah pelaga...kalau anda lihat pasti saksikan spice routes season dua di Tv3 akan di tayangkan pada bulan Puasa ini. Esok saya akan ke Sri Lanka apa pula cerita kan sana.....jumpa lagi saya dan keluarga setiasa berdoa semoga anda setiasa mendapat berkat dan murah rezeki.
